Banana Bread with Cinnamon Butter


This joyous banana bread is easy to create and very easy to devour topped with lashings of creamy cinnamon butter!


Ingredients:

Banana Bread

2 eggs, lightly beaten

300g plain flour

1 tsp baking powder

2 tsp cinnamon

150g brown sugar

2 tsp honey

100ml extra virgin olive oil

3 very ripe bananas

2 tsp coconut sugar (or raw sugar)

Optional: Add ½ tsp nutmeg and/or cardamom


Cinnamon Butter

250g butter, softened

40g brown sugar

1 tsp ground cinnamon


Method:

  1. Preheat oven to 180°C. Grease and line with baking paper a loaf tin.

  2. In a medium bowl sift together the flour, baking powder and cinnamon and set aside.

  3. In a small bowl mash the bananas and also set aside.

  4. At this point, you can now either mix using a wooden spoon in a large bowl or use a stand mixer with paddle attachment but only mix until just combined.

  5. In a stand mixer/bowl add the lightly beaten eggs, oil, brown sugar, honey and mix until fully combined. Add the mashed bananas and mix through.

  6. Add the sifted flour, baking powder and cinnamon and mix gently through until combined.

  7. Pour mixture into the prepared loaf tin and sprinkle the coconut (or raw) sugar evenly over the top.

  8. Bake in preheated oven approx 45min or until testing skewer comes out clean.

  9. Meanwhile, mix all ingredients for the cinnamon butter in a medium bowl with hand mixer or spatula until lightly whipped. You can alter more or less brown sugar and cinnamon depending on your taste.

  10. When banana bread is baked allow to stand in loaf tin for 5min then turn out onto a cooling rack.

  11. Enjoy thick slices of banana bread with creamy lashings of cinnamon butter!
